Did you know that cucumbers have super powers? Although they are a rich source of water they are also super packed with vitamins, minerals, lignans and other phytonutrients. Here are just a few examples….

Multi-Vitamin Power: Cucumbers contain rich amounts of vitamin B5 (pantothenic acid), vitamin C, vitamin K, potassium, magnesium, manganese, silica, and fiber.  
Hormone Balancing Power: Cucumbers contain powerful lignans that bind with estrogen-related bacteria in the digestive tract to potentially reduce the risk of certain cancers, including breast, uterine, ovarian, and prostate.

Inflammation Fighting Power: Cucumbers contain phytonutrients called cucurbitacins that inhibit cancer cell development. Cucumbers’ anti-inflammatory properties make them useful when applied topically for skin irritations and puffiness or sunburns.

– 2 organic peeled cucumbers (cucumbers are heavily sprayed so organic is essential)
– 1/2 squeezed lemon
– 1/8th cup of chopped mint (or cilantro)

Add ingredients to your blender. Serves 2.
